Keto Banana Bread

This is an awesome treat, and good desert, best yet sugar free, and keto!

Ingredients

2 Cups Almond Flour

1/4 Cup Coconut Flour

1 TBS Baking Powder

2 TSP Cinnamon

1/2 TSP Xanthan Gum

1/4 Salt

1/2 Cup Of Butter (Softened)

2/3 Cup Of Stevia

4 Large Eggs (At Room Temperture)

1/2 Cup Of Almond MIlk

2 TSP Banana Extract

1 Cup Of Chopped Walnuts (Optional)

Instructions

Mix your dry ingredients, other than the Stevia and B walnuts. Mix it up really good.

Add your butter to a bowl,. Add your Stevia and with a blender blend until its creamy, Add your eggs. Make sure you add 1 at a time and keep mixing. Then add the rest of the wet ingredients. Start adding your dry ingredients. Add in half of your walnuts, and mix well.

Take a bread pan and line it with parchment paper. Add your bread into the pan. Make sure you make it smooth. Add the rest of the walnuts to the top.

Preheat your oven to 350F for 35 to 40 minutes. Put some aluminum foil to the top. Bake for another 25 minutes.

Take a tooth pick and insert into the middle to make sure its. Cool before serving.

Keto Ice Cream Cake

Loosing weight has never been so fun and tasty, yes this takes time and yes its a lot of ingreidents and yes a lot of waiting but its so worth it!

Ingredients

Cake

1 and 3/4 Cup Of Almond Flour
1/3 Cup Of Cocca Powder
1/3 Cup Of Stevia
1 TSP Baking Soda
1 TSP Baking Powder
Pinch Of Salt
Add 3 Eggs
1 Quarter Milk
2 TBS Melted Coconut Oil
1 TBS Of Vanilla Extract

Ice Cream

2 Cups Of Heavy Whipping Cream (We used butter milk, yes I know its not heavy whipping cream but it works.)
3 TBS Unsweetened Cocoa Powder
1 TBS Stevia
2 TSP Vanilla Extract
1 TSP Bananna Food Flavoring
1 Handful Of Almonds

Cream Cheese Frosting

2 Pack Of Cream Cheese
4 TBS Of Butter
4 TBS Of Vanilla
2 TBS Of Stevia

Cake Recipe

You need to do this twice, so when one cake is done and cooled down and out of the cake pan you can do it all over agian.

Take the dry ingreidents and put them in a large mixing bowl wisking th

Add To A Pan
Preheat Your Oven To 350 Degrees
20-30 Min

Let this cool down take it out of the pan and wrap it up, and do it once more we will need 2 of these cakes.

for the 2nd cake you can double everything to make a larger base if you wish

Ice Cream Recipe

In a bowl pour in your cream, and take a blender and blend this for a few minutes until you start seeing peaks.

Pour in your vanilla and banana food flavoring and sugar, and take a spoon and stir this in, and then your cocoa powder, and stir this in until it is fully incorporated and pour into the same cake pan as you had before for the cakes and stick into the freezer, and then leave sit to set in the freezer for at least 8 hours, it may need a bit more or less, but you are not ready for the next step until this part is done.

Frosting Recipe

Put everything into a mixing bowl and mix until you get a rich creamy frosting, it was this simple.

Making The Cake

Put the bottom layer on a big plate, and then the ice cream on top, and then finally the top layer, and then frost.

Your going to want to put this into the freezer for a few hours and thats it, when your ready to serve let it sit out a bit before eating away the ice cream needs to melt a bit.

Keto Diabetic Friendly Homemade Marshmallows and Rice Crispy Squares

This is a great treat, and easy to make, you need a bit of patience, but it will be well worth it and it will be great for any diet!

Ingredients

1 Cup Of Water
1 Cup Of Water
2/3 Cup Of Stevia
2 TSP Cream Of Tarter
2 Pack Of Gelatin
6 Cups Of Keto Rice Crispys
4 TSP Of Vanilla Extract
3 TBS Of Unsalted Butter

Marshmallows

In a pan greese the bottom, and then put some parchment paper on top of that and then greese that as well.

In a sauce pan put 1/2 cup of water, and then a 1/2 cup of water in a large mixing bowl, and then put one pack of gelatin into the mixing bowl and let it rest

In your sauce pan put your Stevia in and stir it up, add your cream of tarter, and remember to always stir, and bring this up to a raging bowl.

In your mixing bowl, take a mixer and start mixing it and start to add in your sauce mix, and you want to do tis slowly, and keep mixing this and you will need to do this for a while, adding in 4 TSP of vanilla extract.

Keep mixing this and eventually it will start to thicken up and you want to pour it into your pan before it gets totally thick so just before it starts to peak take it out and pour it into your pan and let it sit for at least 8 hours.

If you were just making homemade marshmallows after 8 hours cut them and separate them maybe put a bit of Stevia on top and let them sit another 8 hours.

This process you have to pay attention, especially if your using a very high powered mixer.

After 8 hours, just cut them up, you don’t need to be fancy because they are just about to be melted again any ways.

The Squares

Now in a pot, take a bit of oil, then 3 TBS of butter, and let this melt down a bit.

Put in your marshmellows and let this melt in the potjust becareful to not let it burn.

Now slowly start adding your Rice Crispys until its all coated and not at all liquidly and then pour into a pan and let it sit and cool down (Do not sit this in the fridge until it has cooled down.)

Eggroll Bowl

The Eggroll bowl is a great tasty and so easy and fun to make! I would encourage everyone to invest some time to try this, your family will thank you.

Phase 1 – The ingredients and Prep.

Sweet Soya Sauce

Light soya sauce

Rice vinegar

Sesame seed oil

Black pepper

Crushed chili powder

2 Packs of minced turkey

Liquid smoke

Onion powder

Apple wood spice

Smoked Paprika

Apple cider vinegar

Minced garlic

Minced ginger

2 Bell peppers that have been minced

2 Green onions that have been chopped up.

Shredded cabbage

A bag of shredded carrots

1 Chopped up onion

Phase 2 The Sauce

In a bowl mix up some sweet soya sauce, some light soya sauce, some rice vinegar, sesame seed oil, black pepper, and crushed chili peppers, and mix it up well.

Phase 3 Cooking

In a large wok cook up both packs of ground turkey adding a touch of liquid smoke, and apple wood spice, onion powder, smoked paprika, and some apple cider vinegar, make sure the meat is almost finished cooking before adding anything else, and add your minced garlic and ginger, now add your onions and carrots, then add cabbage and peppers, and then pour in your sauce, and mix well until everything is cooked.

This may be a pain, but you may wish to use tongs to do this, but make sure to stir and mix well, and when done serve this into bowls and your good to go, just top with green onions for the looks.

This is one of our most requested meals, and honestly one of our favorites to eat!

Pinapple Salsa

Phase 1 The Ingredients

  1. Tajin
  2. Ground black pepper
  3. Lo Salt, or NoSalt
  4. Smoked paprika
  5. Onion
  6. Red Pepper
  7. Cilantro
  8. Pinapple (Not canned)
  9. Tomato (Not canned)
  10. Lime
  11. Jalopino (Your choice if you want seeds or not)

Phase 2 Cut them up.

Cut all the vegetiables up, dice them up nice and small, with the Jalopino you don’t have to have the seeds, but if you want the extra spice you can.

Phase 3. Mix.

Mix all the veggies up Add the spice

Now crush the juice of a lime in to the mix, and give it its final mix.

Phase 4. Fridge

Put it in the fridge for an hour or 2 and then your ready to serve!

We find this to be a super easy and fast recipe to make, we think you should enjoy this, let us know what else would you mix, you can put tomatos, you don’t have to, but you can. Note, some people do add vegetable or olive oil, but becareful of that, as it does add celeries and fat.BB

Yogurt Parfait

I often hear the excuse that you didn’t have time for breakfast, and that is hogwash, here is a yogurt parfait that tastes amazing, cheap and easy, and you can make a lot of it in advance to grab and go the next morning, and honestly its basically 3 ingredients and anyone can do this!

Phase 1 Ingredients

  1. Yogurt, Greek yogurt is the best but any will do.
  2. Granola
  3. Fruit

Phase 2 Putting it together

Take a sealable container like a small mason jar and put it 75% full of Greek yogurt, then put in some granola and then some chopped fruit, and the fruit can be a mix, one thing, doesn’t mater what it is, can literally be anything!

Mix that all up and your good to go! Just stick them in the fridge and grab them as needed and you have a good healthy breakfast! We hope you enjoyed this one, yeah its kind of short, but it proves that a good solid breakfast doesn’t require a lot of effort or work!

Iced Tea!

A quick and easy refreshing drink, one that everyone can enjoy and very very tasty!

In a very large pot, start boiling water

Peal 1 or 2 lemons for the zest and get the juice from 2 lemons.

At boiling point put in 5 tea bags, if you don’t want it to be as strong put 3 or 4 tea bags in.

Put in 4 Star Anasee seeds in.

Dump the lemon peals

Dump the lemon juice in

Dump a few tea spoons of cinnimon

Let this steep for 5 minutes, and if you don’t like it so strong, stop steeping in 3 to 5 minutes.

At this point take it off the heat, and remove the Star Anasee, lemon peels (If you used cinnimon sticks remove those too) and then let it cool to room temperature

If you live in a cold place you can sit it outside for a bit.

When its cooled, you can put this in your fridge and drink when you want it, when your ready to serve just put some ice cubes and enjoy.

This is a very simple dish, you can use some cream or milk, if you so wish you can use sugar to sweeten it, and you can use what ever tea bag you want, it tastes great, and so simple.

Mexican Street Corn

Mexican Street Corn

This is an excellent snack, it can be un healthy, and quite hot if you let it be, and you can customize it the way you want, in this recipe I am making a simple base, yes there is a bit of addition to mine, but not a whole lot, we are trying to present this in a healthier way so we are avoiding doing the butter (Yes I am aware that it does add to the flavor, but its unhealthy and I’m not sure its nessasary with all that we have in it already.

Phase 1. Corn

Cook your corn, its normal to use white corn, however not everyone can get access to it, we couldn’t find it at all.

If your using canned corn drain first, other wise cook your corn, we used a bit of low sodium salt, so me peper and tajin.

Let your corn cool off before proceeding.

Phase 2. Putting it all together.

This was easy wasn’t it?

Put some corn in a cup, now presentation is not important, not everyone will care that much.

Put 2 spoon fulls of cream cheese.

Put 2 good squirts of mayo. (Please do not use Miracle Whip)

Put a bit of lime juice over it.

Put some of your favorite hot sauce, we used Franks Sweet Thai Chilli, my absolute favorite!

Then finally add a few sprinkles of Parmesan cheese and thats it your good to go!

This is a great little snack, very tasty and easy to make, a good pleaser, we hope you enjoy it!

Vegan Ranch Dressing

This is a super easy and healthy recipe, made to help those who are tired of eating fatty unhealthy dressing that ruins the health level of your salad, after all, you have a nice healthy salad and then you ruin it by adding a salad that has a lot of oil and other fats that make it worse.

This is a super easy dressing, you simply take 1 or 1.5 cups of cauliflower boil it so its nice and soft, let them cool off a bit before continuing.

In a food processor take 1 clove of garlic, a 3rd of a small onion and 1 cup of cashews and grind them down really good.

Now chop up some dill and parsley.

Now in a blender add your cauliflower then add in 1 cup of cold water.

Add a small amount of apple cyder vinegar, you should always have this on hand as its one of the best things to add to your diet.

Add your onion garlic and dill and parsley, and then add your cashews!

Now blend this up until its the right consistency,

Let this cool off in the fridge before serving, and I promise you this is going to be one of the greatest dressings you will ever have, and best yet, name one thing in this that isn’t healthy! Just pour it over your favorite salad and your game.

Pumpkin Pie

Pumpkin pie is a great seasonal desert, something everyone loves, and honestly a simple easy and can be diabetic friendly!

You can even make a good treat out of the seeds, there is a lot of possibilities!

Phase 1 Clean that Pumpkin out!

So cut the pumpkin into pieces, (You may need 2 depending on the size.)

clean the guts and seeds out and disregard, like I said you can bake the seeds separately!

Put the sliced pumpkin on a baking tray, and bake at 350d for an hour and a half!

Phase 2 Clean the skin off!

You want to wait until the pumpkin has cooled off so you don’t burn yourself, but once it has cooled enough you can take a big spoon and just peel the skin off and put the rest into a blender.

Add the following into the blender.

  1. 2 Eggs
  2. Nutmeg
  3. Cloves
  4. Cinnamon

Now run this through the blender and puree it.

Phase 3 Pie!

Now you can make your own pie crust, or you can buy it, personally sometimes its cheaper to buy it, but can be fun to make your own, but what ever you choose to do, put a pie crust on a baking tray and pour the puree inside it, you want to bake this in a pre heated oven set at 450d for 15 minutes.

Thats it when its done let it cool off before serving!

I’m not sure about everyone else’s family but Thanksgiving and Christmas everyone wants pumpkin pie, and what a better way to send your love to make one or 2 or 3 yourself!
